Ah, summer vacation! Those really warm days of the season, with a long lazy weekend, and quality time spent with your friends and family. Really good food, open grill, and served outside. Those are the elements of a great Fourth of July holiday. At home, I base the menu on a variety of plant-based fried foods. There are so many delicious take-ahead dishes to grill, including summer vegetables, lentil patties, veggie burgers, potatoes, fresh corn, skewers, and fruit, they can all be cooked on the grill!
