How to Cook Artichokes – Sharon Palmer, Nutritionist with Plant Power

Learn how to roast artichokes the easy way with this step-by-step guide to roasting artichokes. You can enjoy roasted artichoke hearts in the heart of these beautiful artichokes prepared whole, easy, healthy, rich in fiber and delicious.

One of my favorite side dishes or easy appetizers is the fragrant, roasted artichoke. I love artichokes, as they are rich in nutrients—fiber, as well as protein, vitamins C and K, folate, and phytochemicals. Needless to say, roasted artichokes are easy, earthy, and delicious. Even my kids love them! Especially when I toss them in a garlic-herb vinaigrette and grill them outside. When are artichokes in season? March through May is the perfect time to get fresh artichokes, and I grow them in the garden every spring, too. It is very easy to make this recipe for roasted artichokes. Fresh artichokes are available at the farmer’s market or grocery store. You can even grow them in other parts of the US, like California.

How to cook artichokes

Wash the artichokes and cut off the top and stem. Then split in half.
Using a metal spoon, scoop out the flower part of the artichokes in the middle.
Boil the artichokes for 10 minutes in hot water, until they are soft.
Put the artichokes in the dish, cut side up.
Make a marinade or vinaigrette (like the one featured here) and drizzle over the artichokes.
Marinate for at least 30 minutes.
Place the artichokes on a hot grill, first on the outside facing the heat for a few minutes, then turn them over and grill for another 5 minutes, until golden brown. Enjoy!
