  • 1/4-1/3 cup unsweetened condensed milk (adjust to taste)
  • 1 cup mango puree (made from 4 mangoes)
  • 1/2 tsp vanilla extract
  • Honey or maple syrup, to taste (optional)
  • 1 1/2 cups graham cracker crumbs (from a 9-ounce package)
  • 4 tbsp chopped nuts (such as almonds, walnuts, or pecans), divided

Instructions:

  1. In a mixing bowl, combine Greek yogurt, natural sweetener, unsweetened condensed milk, mango puree, and vanilla extract until well combined. Adjust sweetness with honey or maple syrup if desired.
  2. Line a 9 x 9 rectangle dish with a layer of graham cracker crumbs.
  3. Spread a layer of the mango mixture over the graham crumb. Sprinkle a spoonful of chopped peanuts over the mango layer.
  4. Repeat the layers until all ingredients are used, keeping the mango mixture layer on top.
  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to set.
