- 1/4-1/3 cup unsweetened condensed milk (adjust to taste)
- 1 cup mango puree (made from 4 mangoes)
- 1/2 tsp vanilla extract
- Honey or maple syrup, to taste (optional)
- 1 1/2 cups graham cracker crumbs (from a 9-ounce package)
- 4 tbsp chopped nuts (such as almonds, walnuts, or pecans), divided
Instructions:
- In a mixing bowl, combine Greek yogurt, natural sweetener, unsweetened condensed milk, mango puree, and vanilla extract until well combined. Adjust sweetness with honey or maple syrup if desired.
- Line a 9 x 9 rectangle dish with a layer of graham cracker crumbs.
- Spread a layer of the mango mixture over the graham crumb. Sprinkle a spoonful of chopped peanuts over the mango layer.
- Repeat the layers until all ingredients are used, keeping the mango mixture layer on top.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to set.
